Sichuan Pork in Lettuce Wraps

Ingredients: 

1 pound minced pork
1 thumb size piece of ginger
2-3 cloves garlic
juice of half a lime
1 tablespoon soy sauce
1 tablespoon vegetable oil
2 tablespoons sichuan peppers
2-3 tablespoons chilli bean paste
1 teaspoon sugar
1 teaspoon sesame oil
small handful chopped coriander (cilantro)
1 head iceberg or romaine lettuce


Directions

  1. Heat vegetable oil in skillet
  2. Add finely chopped garlic and ginger and Sichuan peppercorns, cook on medium heat for 2-3 minutes without browning
  3. Add minced pork and cook until pinkness is gone, stirring continuously and breaking up mince with a spatula
  4. Stir in chill bean paste, soy sauce, sugar and lime juice.  Cook until most of the liquid is absorbed
  5. Remove from heat and drizzle sesame oil and coriander over pork
  6. Spoon into lettuce cups to serve
