Sicilian Cod

Ingredients: 

2 Tbl. olive oil
seal salt and freshly ground black pepper
cod fillets
1 medium onion, peeled and chopped
2 cloves garlic, peeled and minced
1 tsp. dried oregano
can (about 14 oz) of diced red tomatoes
1 tsp. red wine vinegar
chopped fresh parsley


  1. Heat the olive oil in a large skillet with a tight fitting lid over medium high heat.
  2. Season the fish with salt and pepper and place the fish in the skillet.
  3. Cook the fish for 3 min, until bottom sie is golden and then turn and cook on the other side for about 3 min.
  4. Remove the fish from the skillet and set aside.
  5. Add the onions to the skillet and saute until translucent. Add the garlic and oregano and saute for 1 min.  Add the vinegar and season to tast with salt and pepper.
  6. Return the fish to the skillet and spoon some of the tomatoes over the top of each fillet.
  7. Cover and cook until fish is done about 3-5 min.
