1 teaspoon orange zest
1 teaspoon orange juice
2 tablespoons fresh lime juice

rub the pork with the garkic and salt, place in a 4-5 quart slow cooker. add chicken stock, orange zest and juice. cover and cook on low until pork is tender, 7-8 hours. pull pork into 1-2 inch pieces. toss with lime juice return to slower cooker to keep warm
preheat boiler with the oven rack 6 inches from heat. spread mustard on the bottom halves of rolls and top evenly with pork ham and swiss cheese. broil just until the cheese is melted, 1-2 mins. top with pickle slices and sandwhich with the tops of the rolls.
