Smoked Beef Brisket

Ingredients: 

1 (6 pound) fresh beef brisket with a nice fat cap (2.72kg) 1/4 cup brown sugar (60ml)
2 teaspoons paprika (10ml)
2 teaspoons chili powder (10ml)
1 teaspoon garlic powder (5ml)
1 teaspoon ground cumin (5ml)
2 teaspoons onion powder (10ml)
2 teaspoons dry thyme (10ml)
2 teaspoons cracked black pepper (10ml)
1 tablespoon fine espresso powder (15ml)
2 10oz bottled lager
salt and pepper to taste
15 cups of hickory wood chips
