Filling/frosting/topping
1 cup unsalted butter, softened
1 cup marshmallow cream
2 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
1 1/2 cups moist, sweetened coconut (Baker's Angel Flake recommended)
Pink food coloring
