Ingredients: 

8 Oz Soba Noodles (preferably 100% buckwheat)
2T grapeseed oil
14 oz (1pkg) Extra-firm tofu, drained, patted dry, & cut into 1/2 in strips
Coarse Salt
2 Red bell peppers, ribs & seeds removed, thinly sliced lengthwise
1 Head (1 1/2 lbs) Broccoli, broken into small florets
1 Head (1 Lb)Bok choy, trimmed & thinly sliced Crosswise
4 Garlic Cloves, minced
1/2 tsp Crushed red pepper flakes
3T Almond butter (or peanut butter)
2T Water
3T Rice vinegar (unseasoned)
2T Low-sodium tamari soy sauce
