It is a must to put the finished meatloaf back in the oven under a broiler for a few minutes to broil and make the bacon crispy. The bacon helps seal in all the juices and makes a huge difference in the flavor.
1 cup diced yellow onion
1/2 cup diced celery
1/2 cup finely diced seeded tomatoes
2 cloves minced garlic
1 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1 pound ground beef (we use 90/10)
1/2 pound ground pork
1 pound ground veal
2 eggs
1/2 cup heavy cream
1/4 cup ketchup
2 teaspoons Vegetable Spice (see our recipe)
2 teaspoons stone ground mustard
1 teaspoon steak sauce sauce
2/3 cup dried bread crumbs
1 pkg bacon 12-16 oz thin sliced
Line loaf pan with bacon widthwise
Mix all ingredients together in a large bowl
Place meat mixture into the pan about 2/3 full
Fold over bacon so it covers the loaf
Bake in a pre heated oven at 350 for 75 minutes
Drain fat and remove loaf and place it on a wire rack and return to oven set on broil for a few minutes to crisp the bacon.
