Southwest Corn Dip - Helen J.

Ingredients: 

2 cups corn
2-1/4 oz black olives, chopped
1 medium jalapeno, minced
1 small can green chilies
2 large pieces roasted red pepper, chopped
1 cup Monterey Jack cheese shredded
1/2 cup parmesan cheese, grated
1 cup mayonnaise


  1. Preheat oven to 350.
  2. Drain olives & green chilies, put in a mixing bowl with the corn.  Add jalapeno, roasted red pepper, cheeses & mayo, stir well.
  3. Butter a 2qt. baking dish. Place dip in dish, smooth the top & bake until the top is bubbly.  About 30min.
  4. Remove from oven & serve with tortilla chips
