Southwestern Pasta Bake

Notes: 

Really fun to make and eat, adjust the ingredients to your taste. We use a local Hatch Brand of diced tomatoes and chilies.

Ingredients: 

1 10oz can of diced tomatoes and chilie
1 15 oz can diced tomatoes
1 15 oz can tomato sauce
1 6 oz can tomato paste
16 oz pasta shells, regular size
1 pound ground beef
3 tbl taco seasoning
1/2 small onion small dice
1/2 sweet green or red pepper small dice
1/2 chili pepper of your choice (optional)
3 cloves garlic diced
16 oz Mexican cheese
1/4 cup chopped cilantro


Bring large pot of water to a boil and cook pasta about 75% done.

brown ground meat, add taco, as you would for taco meat. Add seasoning diced onion garlic and pepper.

Add canned tomatoes and mix well.

Combine with pasta and pour into a large greased Caserole dish and top with the cheese. sprinkle top with chopped cilantro.

Bake on 350 for about 15 minutes. Let stand for 19 minutes before serving.
