Southwestern Pizza

Ingredients: 

1 cup diced roasted onions (microwave whole unpeeled onion until very soft 4-5 minutes. Cool and cut off root end, squeeze out roasted interior)
1 cup home cooked or canned pinto or black beans (NO added fat) drained
2 tablespoons canned diced mild green chiles
1 teaspoon minced garlic
1/2 teaspoon ground cumin
1 cup grated nonfat cheese (monterey jack and mozzarella if possible)
3 medium tomatoes, sliced 1/4" thick
1 teaspoon tried oregano
salt and pepper
cilantro to top if desired


Directions

Dr Ornish has a  more in depth recipe on page 104. In his wisdom he suggests making dough. Use store bought or mini pizza's can be made on pita bread. I suggest a bobili like product. This is designed to make 2 12 inch pies.

  1. Preheat to 450 degrees (or specified on pizza dough)
  2. Combine roasted onions, beans, chiles, garlic, and cumin.
  3. Split the mixture between the two pizzas and spread over surface as sauce
  4. sprinkle each round with the fat free cheese
  5. arrange the tomatoes in a single layer atop each pizza
  6. top with oregano, salt, and pepper
  7. bake until edges are golden brown and topping is sizzling 15 to 20 (or as specified on dough)
  8. garnish with cilantro if desired.

Tips / Substitutes: I wonder if some sweet corn would be good on this. maybe grilled bbq chicken.
