Southwestern Quinoa Meatball Soup

Ingredients: 

1 lb grass fed ground beef (We get ours from Ray Family Farms)
1¼ cup organic panko breadcrumbs
2 eggs
2 fresh sprigs of chopped cilantro
2 fresh sprigs of chopped parsley
1 tbs of 100% virgin olive oil
½ tablespoon ground cumin
½ tablespoon homemade taco seasoning (Get the recipe here)
1 teaspoon chili ground powder
Salt and pepper (crushed red pepper can be optional for a kick)
About 5 oz of fresh salsa
13 oz of strained tomatoes (we recommend glass jar or container tomatoes, not canned).
1 – 15 oz can of red kidney beans
1 – 15 oz can of great Northern beans
18 oz of beef broth
¾ cup of quinoa (make sure to rinse it!)
1 cup of sweet frozen corn
2 celery stalks (diced)
3 carrots (diced)
1 red bell pepper (diced)
½ green bell pepper (diced)
½ sweet onion (diced)
2 cloves of garlic (minced)
2 tablespoons of butter
4 tablespoons of extra virgin olive oil
Fresh chopped cilantro (optional)
Grated monterey jack cheese (optional)
