½ cup crème fraîche

2 tablespoons extra-virgin olive oil, plus more for garnish

2 teaspoons lemon juice

2 ounces Parmesan cheese, finely grated (about 1 cup), plus more for garnish

½ teaspoon red-pepper flakes

Salt and freshly ground black pepper

Flat-leaf parsley leaves, for garnish
