Rinse the squash with cool water to remove any dirt or debris and pat dry. With a sharp knife, cut the spaghetti squash in half lengthwise. Scoop out the seeds with a large spoon and drizzle about 1 tsp. of olive oil into each half. Spread the olive oil around using your fingers. Add salt and pepper for added flavor.
Preheat the oven to 375 degrees. Grease the bottom of a baking pan with olive oil, and place the spaghetti squash halves face down on the pan.
Set the baking pan on the middle rack inside the oven and bake for approximately 35 to 45 minutes, or until the squash is tender. Remove the spaghetti squash from the oven and let it sit for about 5 minutes before serving.
1.5 lbs of ground beef
1 onions, diced
1.5 cups of stock (I usually use my homemade chicken stock, but you can use beef stock too)
1(14 ounce) can of tomato sauce or homemade marinara sauce
1(14 ounce) can of diced tomatoes
2 cloves of garlic, minced
2 bay leaves
1 TB Italian Seasoning
2 TB of Coconut Aminos (soy sauce)
1/2 ts salt
1/2 ts pepper
1 ts garlic powder
1 small Spaghetti Squash
