Spiced Red Lentil and Coconut Soup

Notes: 

Serves 4

Ingredients: 

2 TB oil
2 red onions, finely chopped
1 chile, sliced finely
2 garlic cloves, chopped
1 piece lemongrass, inner part, finely sliced
1 c red lentils, rinsed
1 tsp ground coriander
1 tsp paprika
1 2/3 c coconut milk
Lime juice
3 scallions, chopped
1 c cilantro, finely chopped
Salt and pepper


  1. Saute onion, chile, garlic, lemongrass 5 minutes
  2. Add lentils and spices.
  3. Pour in coconut milk and 3 3/4 c water, stir.
  4. Bring to boil, stir, reduce heat and simmer 40-45 minutes or until lentils soft and mushy.
  5. Pour in lime juice, scallions, cilantro.
