Spicy Calamata & Marscapone Dip

Serve w/crackers, bruschetta, toast or veggies

Ingredients: 

10 oz frozen spinach, thawed
2 c marscapone cheese, room temp
1 c grated Parmigiano-Reggiano
1/4 c Pitted calamata olives
1 t lemon juice
1 t red pepper flakes


  1. Preheat oven to 375
  2. Drain spinach well
  3. Combine all ingredients saving 1/4 c Parm-Reg for the top.
  4. Stir well; top w/ remaining cheese
  5. Bake for 20 min; let stand 5 min before serving
