1 cup (8 ounces) white vinegar
1 cup (8 ounces) water
3 Tablespoons sugar
1 Tablespoon kosher salt
1 medium jalapeño pepper, sliced thinly
1 Tablespoon fresh ginger, peeled and chopped finely
2 green onions/scallions, thinly sliced
1 clove garlic, peeled and minced
1 English hothouse cucumber, ends removed and sliced thinly
