Spinach & Bean Dumplings

I love this recipe,it is very easy and full of fun.It is also quick to make.

Ingredients: 

185g(6 oz/1 cup)yellow split mung beans
60g(2 oz)frozen chopped spinach,thawed 2 tablespoons chopped fresh coriander
2 fresh green chillies,seeded and chopped large pinch baking powder 1/2 teaspoon salt vegetable oil for deep frying chilli flowers,to garnish.


1)Put beans in a bowl,cover them with water and leave to soak for 4 hours.
2)Drain and rinse under cold running water.
3)Put beans in a blender or food processor fitted with a metal blade and process until smooth,light and fluffy,scraping mixture from sides of bowl several times.
4)Press excess water from spinach and mix into the ground beans.
5)Stir in coriander,chillies,baking,powder and salt.
6)Half-fill a deep-fat pan or fryer with oil and heat to 190C (375F)or until a cube of day-old bread browns in 40 seconds.
7)Drop 6 heaped teaspoonfuls of mixture into the hot oil and fry for 4-5 minutes or until golden brown.
8)Drain dumplings on absorbent kitchen paper and keep warm while frying remainder.Serve hot garnished with chilli flowers.
