Spinach-Tofu Puffs

Notes: 

These balls may be prepared in advance and then frozen (unbaked). When ready to use, thaw for 10 to 15 minutes and then bake as directed.

Ingredients: 

1 package (10 ounces) frozen spinach, thawed and squeezed dry
1 1/2 cups whole-grain cracker crumbs or dried bread crumbs
1 pound firm tofu, mashed
1/2 cup finely chopped vidalia onion
3 large eggs, lightly beaten
1/3 cup butter, melted
1/4 cup grated Parmesan cheese
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
