Spring Rolls with Peanut Sauce

Ingredients: 

8 spring roll wrappers

Filling
1 c shredded napa cabbage
3/4 c shredded carrots
1 small red pepper, cut in thin strips
1/2 c fresh bean sprouts
1/2 c chopped cilantro

Spicy Peanut Dipping Sauce
1/2 c smooth natural peanut butter
1 TB minced garlic
1/4 c tamari or soy sauce
1/4 c water
1 TB rice vinegar
1 tsp Asian chili paste
1 tsp sugar
2 TB finely chopped cilantro


  1. Dip a wrapper in a shallow bowl of warm water to soften.
  2. Remove from water and place on piece of plastic wrap
  3. Filling: arrange a small amount of each ingredient on the bottom third of wrapper
  4. Bring bottom edge over filling and fold in sides tightly
  5. Dab top edge with water and roll up tightly
  6. SAUCE:Combine ingredients in food processor
