450 g sprouting broccoli
2 garlic cloves, sliced
1 tbsp extra-virgin olive oil
3 banana shallots, sliced in to thin discs
2 tbsp coarse grain mustard
3-4 tbsp classic vinaigrette
salt and freshly ground black pepper
For the classic vinaigrette (makes 120ml)
20 ml white wine vinegar
salt
100 ml Olive Oil
½ tsp Dijon mustard
