Sticky Date & Macadamia Nut Pudding

Traditional sticky date pudding is given a lift with the addition of macadamia nuts and sweet caramel sauce.


250 g pitted dried nuts, chopped
1 cup water
1 tsp bicarb
100 g butter
1 cup brown sugar
1 tsp vanilla essence
2 eggs, lightly beaten
1 cup self raising flour
3/4 cup toasted macadamia, chopped
300 ml cream
11/4 cups brown sugar
1 teaspoon vanilla essence
60 g butter
