1-1/4 lbs. strawberries, rinsed with stalks removed
2 cups red wine, such as Cotes du Rhone
2 Tablespoons cassis
1 cup sugar
1 cinnamon stick
4 whole cloves
1 vanilla bean (about 2" long), cut in half lengthwise
pinch of mace
orange zest to your taste
4. After the wine has cooked for 10 minutes, add the strawberries, then remove immediately with a skimming ladle.
5. Reduce the wine until thick and syrupy.
6. Take the pan off the heat and allow to cool. When it is cool, add the cassis.
7. Pour the syrup over the strawberries and chill them for at least 6 hours.
To Serve: Divide the strawberries between 6 soup plates. Pour the syrup over them and garnish with orange and lime zests.
