Stuffed Peppers/Aoli sauce

Notes: 

i have been playing with cooked pepper recipes. i like to cut them in half ( i find one good size pepper filled depending what you put inside is too much for me ?)
Next time i make this i should may add some more spices? It was quite good :) possible a bit more tomato ( to make it a bit less dense .?

Ingredients: 

4 peppers good size
1/2 cup dehydrated mushrooms
2 cups frozen cooked chicken (thawed)
1 1/2 cups frozen cooked thawed quinoa
3/4 cup chipotle aioli ( dipping sauce)
1 med tomato diced
1 1/2 cup shredded havarti jalapeño cheese
2 tsp dehydrated garlic
Good splash Tamara (soya sauce) 2 tbsps ?
1 cup onion diced
1 tbsp oregano
Small finger fu;ll fresh basil
Cilantro ( to sprinkle on top)


  1. Boil kettle for water to soak mushrooms (10-15min)
  2. Let chicken /quino thay at room temp (or if organized can thaw out in refrigerator night before?
  3. Sauté onions in frying pan add mushrooms plus the water,then add garlic and soya sauce (reduce)
  4. Mix together mushrooms,onions, quinoa,oregano chicken,tomato,aloil sauce in a big bowl
  5. Reheat oven 350 degrees
  6. Cut 4 peppers ( red /yellow sweet ones) in half take out seeds and stem place in a big lasagna dish
  7. Fill pepper with mixture, then place cheese on top when all peppers are filled bake 30 minutes  
  8. Sprinkle cilantro on top before serving
