Sugar Pumpkin Soup with Ricotta and Leek

Ingredients: 

2 tablespoons extra virgin olive oil
½ cup heavy cream
1 leek, white part only, sliced thinly
¾ cup ricotta cheese
6 cups chicken broth
1 lb sugar pumpkin, peeled and diced
1 onion, sliced thinly
Salt and freshly ground pepper
Sprigs fresh thyme, for garnish
