Sushi

Notes: 

Can serve sushi with miso or clear soup or salad with ginger dressing but is also very filling by itself

Ingredients: 

Sushi rice (short grain), Nori sheets, sushi vinegar, fillings of choice


First cook sushi rice 2 cups

While rice is cooking make sushi vinegar mix 1/4 cup vinegar with 1-2 spoonfuls of sugar heat on stove until sugar dissolves Once rice is cooked stir in sushi vinegar allow sushi rice to cool in fridge make ahead of time Place plastic wrap over sushi mat on chopping board lay nori sheet shiny side down on plastic wrap on sushi mat with a spoon or rice paddle spread sushi rice over nori sheet Line up fillings in a horizontal line in middle of sheet Roll sheet over fillings press and squeeze then roll again to complete the roll Cover with plastic wrap allow to chill in fridge for at least 2 minutes Take out chilled sushi roll and place on chopping board uncover plastic wrap with steak knife cut gently in a slicing motion place sushi on plate or serving platter Filling Ideas Cream cheese, Smoked Salmon, Cucumber, Egg salad, Tuna salad, cooked shrimp, cooked fish fillets patted dry, chicken, steak, Avocado, pumpkin, tofu Ninja Roll Make a cream cheese, shrimp or smoked salmon, avocado roll dip in egg then flour then deep fry until flour is crispy drain on paper towels top with spicy mayo or serve spicy mayo on side To make spicy mayo mix mayonnaise with shriacha sauce
