Sweet Potato Sonker

Don't where I got this either, but it sounds a lot like my grandma's recipe.

Ingredients: 

Dough:
2 cups self rising flour
2 tablespoons shortening
1/2 cup mild
1 egg
1 tsp. sugar
1 tablespoon vinegar
Filling:
Sweet potatoes
2 cups sugar
2 cups water
1 teaspoon cinnamon
1 teaspoon vanilla


  • Dough
  1. Place flour in a large bowl: Spoon shortenting in the middle of the flour. Work shortening into flour unti almost like corn meal. 
  2. Mix egg, sugar, and vinegar together and stir into milk.
  3. Pour into flour mixture gradually. Work together until you have dough. Take dough and lightly sprinkle with flour.
  4. Lay dough on a board sprinkled with flour. Roll out and cut into strips. 
  5. Grease sides of a 9x13 pan. 
  6. Place strips of dough around sides only. Don't use up all of the dough strips, as you will need to top the sonker. 
  • Filling
  1. Cut sweet potatoes and place in bottom of the pan.
  2. Mix remaining ingredients and heat in a pot on the stove until sugar is dissolved and stir constantly. 
  3. Pour over potatoes.
  4. Lay strips of dough over top of potatoes. 
  5. Cut a stick of butter into small pieces and place all over the top of the dough. Bake 45 minutes at 350 degrees F.
