Sweet Potatoes with Ginger and Orange

Notes: 

This is vegetarian, vegan, gluten-free, low-fat, low-salt and has no added sugar, let alone marshmallows. Plus it’s a beautiful color with a bright, rich flavor. Of course a little butter makes them better, but they’re truly delicious without it.

4 large sweet potatoes, about 3 pounds
2 oranges
2-inch piece peeled fresh ginger
