Thai Coconut Corn Stew

Ingredients: 

1/2 tbsp oil
1 cup onion, diced
3 medium cloves garlic, minced
1 tbsp fresh ginger, grated
3/4 tsp coriander seeds
3/4 tsp sea salt
1/4 tsp crushed red pepper flakes
1 stalk lemongrass
4 cups frozen corn kernels (from 4 ears of corn)
2 cups vegetable stock
1 can (14 oz) coconut milk
1 red bell pepper, diced
2 tsp lime zest (from 1 lime)
2 tbsp freshly squeezed lime juice (1 lime)
1/3 – 1/2 cup fresh cilantro, chopped
