Thai Leaf Bites

Ingredients: 

5 or 6 large lettuce leaves

Sauce
1/2 c unsweetened shredded coconut
1/4 unsalted roasted peanuts
1/4 cup sugar
3 TB tamari or soy sauce
1/3 c water

Filling
2 or 3 Thai chiles, seeded, cut into rounds
1 lime, sliced and finely chopped, including peel
1/2 c coarsely chopped roasted peanuts
1/2 c unsweetened coconut, toasted
1/4 c minced shallots
1/4 c peeled and minced ginger
1/4 c chopped cilantro leaves


  1. Wash and dry lettuce leaves and tear into 20 pieces about 4 inches square
  2. To make sauce, combine ingredients in small saucepan over med heat and bring to boil
  3. Reduce heat to low and simmer until thickened, about 5 minutes
  4. Remove from heat and allow to cool slightly
  5. Transfer to blender or food processor and process until smooth
  6. For filling, place ingredients out and put into lettuce leaf
