Thanksgiving Creamy Mashed Potatoes with a side of Nashville Hot Chicken recipe by Christopher West

“Hot chicken,” or spicy fried chicken, is a signature dish of Nashville, Tennessee. In our take, we’re mixing spices directly into the flour for our breading—including cayenne pepper, pink peppercorns, and paprika. We're also marinating the chicken in a mixture of milk, vinegar, and the same zesty spices, for extra-moist, flavorful results. Creamy mashed potato and green beans dressed in an easy vinaigrette round out the dish.

Ingredients: 

8 LBS potatoes (pick your favorite kind)
2 sticks of butter
2 to 3 packages herbs and garlic laughing cow
3 x 32 oz chicken stock
2 cups heavy cream
1 cup whole milk
3 tablespoons minced garlic
Salt and pepper to taste
Nashville Chicken:
Chicken Drumsticks
Favorite spicy rub (I used spicy honey garlic)
Olive oil for coating
My famous green beans:
3/4 pound bacon
3 cans green beans (2 drained)
3 beef bouillon cubes
1 healthy spoon of country crock or 1/2 stick of butter.


Step 1

Clean and peel the potatoes. Cut them up. Heat up the chicken stock to a boil and cook the potatoes until fork tender. This is roughly 10 mins. In a separate pot melt the butter, milk, and heavy cream together. Drain the potatoes and then put them back into the pot. Add all of the laughing cow. Start to mix up with a mixer.

Step 2

Slowly add in the liquid mix. Continue mixing and adding liquids until the potatoes come out nice and creamy. Give it a taste. Add salt and pepper to taste and mix in.

Step 3

Preheat the oven to 425. Rub the olive oil onto the chicken drumsticks. Coat the chicken with the rub. Cook in the oven for about 40 minutes. You are looking for an internal temp of around 175. After hitting temp pull from the oven. Drop into the Nashville hot sauce and drain off.


Step 4

Cut up the bacon until chewy and drain the fat. In a pot pour the beans, cubes and butter. Add the drained bacon. Heat on medium until it starts to boil. Lower heat to a low and simmer for 20 mins to half an hour. This can simmer longer if needed. That only adds more to the flavor!
