Three Bean Salad

Notes: 

Sometimes I add a can of Rotel tomatoes w/habeneros for a spicy dish. You can add a can of corn also. This is a simple, tasty recipe that doesn't use much sugar.

Ingredients: 

1 (16 oz.) can cut green beans
1 (16 oz.) can yellow wax beans
1 (15 oz.) can kidney beans
1 medium green pepper
1 medium onion
3 Tablespoons sugar
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup olive oil
6 Tablespoons vinegar (maybe a bit more)


  1. Drain all three cans of beans and rinse well. Use a sieve. If you just tip the can to drain them, a lot of the liquid remains and dilutes the flavor of the dressing.
  2. Chop the green pepper.  Cut off about 3 slices of onion, break them into rings and chop the rest of the onion finely.
  3. Combine dressing ingredients and mix well.  Pour over the beans, green pepper and onions. cover and refrigerate several hours for flavors to blend.
