Tilapia with Lemon Caper Butter Sauce

Notes: 

I used the sauce over the Fish and brown rice with brussel sprouts that I parboiled and then pan fried to brown them

Ingredients: 

1/4 cup lemon juice or more if needed (2 large lemons)
1 tbsp white wine vinegar (I didn't have any so I used white wine and a splash of redwine vinegar)
1-2 cloves of garlic (recipe calls for 1 tbsp of minced shallot but I forgot that at the store :)
2 tbsp of cold unsalted butter (calls for 1/2 a cup, I used less)
1 tbsp of drained and chopped capers
2 tbsp chopped fresh flat leaf parsley
2 tsp of lightly packed finely grated lemon zest (I used about 1 lemon)
salt and freshly ground pepper

  1. Put lemon juice , vinegar and garlic (or shallot) in a sauce pan, simmer over medium-high heat, cook stiring until liquid reduces a bit
  2. Add the butter, use a fork to move it around the pan and the mixture will start to bubble/boil at the edges, butter should look creamy not melted and oily
  3. Remove the pan from the heat whisk in the capers, parsley, lemon zest salt and pepper

Dredge Tilapia in just a bit of flour rub salt, pepper and paprika on both sides

Heat butter and olive oil in a pan (could use either as well) get the oil hot add the Tilapia, cook about 4 minutes on each side on Medium heat
