Ingredients: 

3 1/2 pounds ripe tomatoes
2 tablespoons unsalted butter
2 clovesgarlic, minced
1 cup finely chopped onion (1 large)
1 1/2 cups loosely packed fresh basil leaves
1 1/2 teaspoons sea salt or kosher salt
1/4 teaspoon ground black pepper
1 1/2 cups finely shredded Gruyere or Emmentaler cheese (6 ounces)
1/2 cup whipping cream
1 tablespoon Armagnac or cognac (optional)
