Tomato, Lentil and Bacon Soup

Notes: 

I have made this many times. You can use tinned tomatoes if you don't have fresh.

Ingredients: 

1 tablespoon olive oil
1kg fresh ripe Roma tomatoes
200gm bacon or chorizo
1 medium red onion
2 cloves garlic
2 med celery sticks
1 med carrot
1 med zuchinni
1/3 cup dry red lentils
chicken stock (I use Massel powder)
fresh basil and grated cheese to top


  1. Dice bacon, onion and celery, saute in olive oil for a few minutes. Add crushed garlic
  2. Grate carrot and zuchinni and add to pan
  3.  Roughly chop tomatoes and throw in as well
  4. Add lentils and saute for a minute
  5. Pour in about 1 litre of stock, depending how thick you like your soup, as the tomato creates liquid as it cooks
  6. Stir thoroughly and put lid on pot, checking every few minutes for liquid levels.
  7. The soup should be ready to eat in 20 minutes. Chop basil and stir in for a minute then add salt and pepper to taste.
  8. Serve topped with grated cheses if wanted.
  9. Crusty Italian bread (Pane de Casa etc) is perfect as an accompaniment.
