Tomato, Lentil and Onion Soup

Notes: 

Serves 4-6

Ingredients: 

2 tsp sunflower oil
1 large onion, chopped
2 celery ribs, chopped
3/4 c split red lentils
2 large tomatos, roughly chopped
3 3/4 c vegetable stock
2 tsp herbes de Provence
Salt and pepper


  1. Heat oil and saute onion and celery.
  2. Add split lentils and cook 1 minute.
  3. Stir in tomatoes, stock, herbs, salt, pepper.
  4. Cover, bring to boil, simmer 20 minutes, stirring.
  5. Puree in blender or food processor.
