TOMATO TARTLETS

Notes: 

The size can be adjusted if you have smaller tomatoes. The cookie/biscuit cutter should be about 1/2 inch bigger than the diameter of the tomato slices.

Ingredients: 

All-purpose flour, for rolling
1 sheet frozen puff pastry, thawed
2 1/2 ounces grated sharp white cheddar (2/3 cup packed)
3 medium tomatoes, cut into three or four 1/4-inch-thick slices each
4 teaspoons EVOO
Ground black pepper
1/3 cup small basil leaves, for serving
