Top Banana Bread

Notes: 

Makes good mini muffins, with and without chocolate chips.
Less sugar is usually added, or else too sweet.
Let bananas ripen for few days until brown.
Substitute margarine with butter?
aka Top Banana Cake (PARVE)

Ingredients: 

1 teaspoon oil for greasing
1 cup sugar (too much, 3/4 cup instead)
1/2 cup margarine
2 eggs
1/2 cup orange juice
3 bananas
1 teaspoon vanilla
1 1/2 teaspoons baking soda
1 1/2 cups flour
1 cup chocolate chips (optional)


Directions:

1. Grease baking pan (ie 9 inch tube pan), UNLESS its a silicon muffin pan.

2. Mix sugar and margarine together in the mixer bowl on medium speed till well blended.

3. Peel and then mash the bananas with a fork in a small bowl.

4. Add remaining ingredients one by one to mixer bowl in the order they are listed. Be sure to mix well on medium speed after each addition.

5. Pour mixture into baking pan.

6. Bake at 350 degrees Fahrenheit for 40 minutes or till golden brown. If making muffin shapes, cook for only 20 minutes.
