downtown locations. Owner Dan Tidwell devised the recipe with input
from friends and several customers. The following is half of the
original recipe; it makes about 7 quarts.
5 pounds chili-grind extra-lean beef
1 quart chopped white or yellow onion
1/2 cup tomato paste
1 cup chili powder (Treebeard's uses McCormick's)
1 1/2 tablespoons cayenne
1 heaping tablespoon paprika
3 1/2 tablespoons ground cumin (cominos)
1/2 tablespoon (1 1/2 teaspoons) garlic powder
1 tablespoon salt
6 to 12 cups cooked pinto or dark red kidney beans with liquid
