- 1 red pepper, finely sliced
- 1 white onion, finely sliced
- 2 Burford Brown eggs
- 30g butter
- 1tsp smoked paprika
- 2tbsp Greek yoghurt
- 1/4 a clove garlic, finely minced
- Sea salt
- Freshly ground black pepper
- 125g spinach, washed
- Olive oil, for frying
