Turmeric Glow Soup

Ingredients: 

2 Perfect Spoonfuls of Turmeric Glow tea
3½ cups water (divided)
½ spaghetti squash, seeds removed
2 medium carrots, coarsely chopped
oil (olive, canola, coconut… any will work)
¼ cup lentils
3 cups vegetable or chicken stock
½ stalk lemongrass, coarsely chopped & lightly bruised
½ inch of ginger, finely chopped
1 clove garlic, finely chopped
½ tsp ground turmeric
1 tbsp brown sugar
juice of 1 lemon
1 tbsp fish sauce (optional)
1 tsp soy sauce (optional)
1 small bird eye chili, thinly sliced (optional)
1 cup spinach, chopped
3 tbsp coriander, chopped
salt and pepper
