Ultimate Chicken Pot Pie


Pie Crust:
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1 cup (2 sticks) butter, chilled and diced
1/4 cup ice water, or just enough to form a ball

Filling: (adapted from Allrecipes)
1 lb. (about 2) boneless, skinless chicken breast halves, cubed
1 cup sliced carrots
1 cup frozen green peas (optional)
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon celery seed
1 3/4 cups chicken broth (or 1 3/4 cups water + 1 cube chicken bouillon)
2/3 cup milk
