Veal Stew

Ingredients: 

2 pounds veal cubes
1 quart cold water
1 bay leaf
1 teaspoon salt
1/8 teaspoon pepper
1 small onion, cut in half
1/4 cup butter
1/2 cup all-purpose flour
liquid from veal
2 cups mushrooms, sliced
1/4 cup white wine
1/4 cup fresh chives, chopped
1 pinch nutmeg
6 cups rice, cooked


  1. Bring first 6 ingredients to a boil. skim off foam and reduce heat.
  2. Cook for 40 minutes or until meat is tender.
  3. Drain meat and reserve liquid.
  4. Heat butter in a braising pan, add flour , cook 2 minutes. Add liquid which was reserved.
  5. Add rest of the ingredients except for the rice. Boil all for 5 minutes.
  6. Add meat and return to a boil.
  7. Serve over rice.
