Vegan “Cream” of Mushroom Soup

Serves 6-8


1 oz dried mushrooms (i.e. porcini mushrooms)
1/2 cup unsalted raw cashews
4 tbsp coconut oil
2 sprigs rosemary, leaves picked and chopped
3 sprigs thyme, leaves picked
2 leeks, white and light green parts only, thinly sliced
3 cloves garlic, minced
Sea salt and paprika, to taste
24 oz mushrooms (1 1/2 lb), thinly sliced (i.e. crimini, shiitake and/or exotic mix)
3 cups vegetable stock
Freshly cracked black pepper, to taste
Chopped chives for garnish
