Vegan Butterfinger Candy

Notes: 

You need an accurate candy thermometer for this recipe; if it goes over 290 degrees, the peanut butter base will be too hard — not inedible, but not the texture we’re aiming for here.

Ingredients: 

1 c creamy, sweetened peanut butter
1 tsp vanilla extract
¼ tsp salt
1 c sugar
⅓ c light corn syrup
½ c water
¾ cup vegan chocolate chips
1 Tbsp shortening, optional
