Vegan Turmeric & Coconut Milk Vegetable Bowl

Ingredients: 

1 cup long grain white rice cooked with water & vegetable broth
1 13.5 oz can of full fat coconut milk
1/2 cup water
half a head of broccoli, chopped in florets
1 cup baby rainbow carrots
1 tsp turmeric
2 bay leaves
salt & pepper
2 tbsp coconut oil
2 cloves of garlic, chopped
half a small shallot, chopped
cilantro, as a garnish
1/2 lime for fresh lime juice
