Ingredients: 

Caramel:

3 cups sugar
1/4 cup water
1/4 cup corn syrup
2 1/2 cups plain soy milk
1 stick Earth Balance margarine, cut into four pieces.
2 tsp vanilla extract
1/2 tsp sea salt

Crust:

1 1/2 sticks Earth Balance margarine at room temperature
1 cup sugar
1 /2 vanilla bean
1/2 tsp kosher salt
2 Tablespoons ground rice
2 cups cake flour

Topping:

5 oz dark chocolate - chopped into 1/2 inch pieces
2 tsp trans fat free vegetable shortening
coarsely chopped salted peanuts
