Vegetable Samosas

Ingredients: 

2 tbsp vegetable oil
1 onion, chopped
1/2 tsp ground coriander
1/2 tsp ground cumin
pinch of turmeric
1/2 tsp ground ginger
1/2 tsp garam masala
1 garlic clove, crushed
8 oz/225g potatoes, diced
1 cup frozen peas, thawed
5 1/2 oz/150 g spinach, chopped

Pastry:
12 sheets phyllo pastry
oil, for deep-frying
