Vegetarian Braised Lemongrass Stuffed Vietnamese Tofu

Ingredients: 

Tomato sauce ingredients
Oil, to fry
2 large shallots, finely diced
2-3 cloves garlic, minced
2 tsp freshly grated ginger
minced red chili, to taste
60ml (1/4 cup) low-salt vegetable broth or water
2 tsp palm sugar
2 tsp dark soy sauce
2 tsp soy sauce
1 tsp lime juice
1/4 tsp turmeric
Pinch or two of salt
400g tin of tomatoes
Stuffed Tofu Ingredients
350g firm tofu (pressed), plus oil to deep fry
Kitchen twine
2 stalks lemongrass, tough outer layer removed, finely diced
2 small spring onions, finely diced (about 1/4 cup)
1/2 tbsp toasted sesame seeds
1 tbsp palm sugar
2 tsp soy sauce
1/2 tbsp lime juice
Large handful fresh coriander, chopped (scant 1/4 cup once chopped)
Pinch of salt
