Veggies: Spaghetti Squash Casserole/

Ingredients: 

1 small spaghetti squash (1-1/2 to 2 pounds)
1/2 C water
1 lb ground beef/Kick-up flavor with Italian Sausage
1/2 C chopped onion
1/2 C chopped sweet red pepper
1 garlic clove, minced
1 C canned diced tomatoes
1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp pepper
1 C (4 oz) shredded mozzarella or cheddar cheese
1 T chopped fresh parsley
