Vodka Mascarpone Mushrooms over Fried Tofu

I made this for breakfast because firm tofu always reminds me of well cooked scrambled eggs - but this easily is a nice supper.
The ingredients are what I had on hand, feel free to sub in with what you like or have in the fridge. But the spicy sweetness of the Mango Ginger Chutney is an important layer - try to use some sort of tangy sweet product to thinly spread on the toast.

Ingredients: 

Serves 2 (or 3)

4 slices whole grain bread for toast
1 TBSP Mango Ginger Chutney
2 TBSP Vodka
2 or 3 TBSP Mascarpone Cheese
6 med to large Cremini Mushrooms
1 pkg Extra Firm Tofu
2 TBSP Oat Bran
1 TBSP All purpose Flour
Bacon fat, butter, oil -whatever you like to pan fry in. Enough to come up 1/4 to 1/2 up the tofu, and also separate amount to saute the mushrooms.
1 TBSP Garam Masala
Salt to taste

Optional:
Bacon and oranges as sides. I used bacon so I could saute the mushrooms and fry the tofu in the rendered fat.


  1. Drain the tofu, cut into 6 even slices.  Lay on several paper towels, cover in another layer of paper toweling and put a cutting board or pot on top to press out excess moisture from the tofu.  
  2. In a bowl large enough to fit a tofu slice, mix oat bran, flour, garam masala and salt (if salt free garam masala, if it has salt in it skip the salt)
  3. Slice mushrooms  (I had 6 creminis left, probably would be nicer with more, you decide how much topping you want.)
  4. Heat fat of choice in pan, saute mushrooms until still firm, but cooked. (I didn't use s&p because I used the bacon fat from the bacon cooked earlier, but be sure to season if you just use butter or oil).
  5. Remove mushrooms and set aside for later.
  6. Put enough fat in the pan to come 1/4 to 1/2 way up the tofu slices.  Heat on med to med-hi heat until almost smoking hot.  (Reassure the husband who thinks the fire alarm will go off)
  7. Meanwhile coat the tofu in the oat bran/flour/spice mixture.  (if the tofu is too dry, you may need to dip in something to moisten it enough for the dry mix to adhere).
  8. Fry tofu in fat until coating is nicely toasted.  Remove from pan and keep warm in heated oven until all slices are done.
  9. Drain off fat.
  10. Return mushrooms to pan, deglaze with the vodka until the vodka has almost cooked off.
  11. Meanwhile, you need to have toasted or had someone toast, the bread to desired crispiness and thinly spread the chutney on one side of the bread. (I guessed at the 1 tbsp, probably didn't even use that much amongst all the toast, use to taste). 
  12. Add mascarpone to mushrooms, heat through.
  13. Place toast on plate, put tofu on top of toast, top with mushrooms/mascarpone mix.  
  14. Add orange slices and bacon if desired.  Enjoy.
